Method of preparation

To start, combine the eggs with sugar: add about 3-4 tablespoons of sugar to a container and add the eggs, mix everything with a whisk at low speed

Now, take the butter, cut it into small cubes, and melt it in a water bath, stirring constantly to prevent it from boiling. When all the pieces dissolve, remove the mixture from the heat and let it cool

Next, add the melted butter to the egg mixture, stir everything with a fork, and beat it slightly with a mixer at low speed

Take the flour, sift it through a fine sieve, and gently fold it into the egg-butter mixture

Knead the dough for Tatar chak-chak: it should be dense but soft, so it’s pliable for further work. Cover the dough with a loose linen cloth and place it in the refrigerator for 15-20 minutes

Now it’s time to prepare the honey caramel at home. Take the honey and add the remaining powdered sugar to it, mix the ingredients thoroughly. Leave it aside until you shape the chak-chak

Take the dough out of the refrigerator and knead it well to roll out a thin layer no thicker than 1 centimeter. Now, cut the dough into strips about one and a half centimeters wide. Roll these strips into ropes and cut them into small sticks, no longer than five centimeters

Take a deep frying pan or a small pot, pour vegetable oil into it, and fry small portions of chak-chak for 3-4 minutes. The pieces should have a golden crust around the edges

Now, take the honey caramel and place it on the heat: cook it for 4-5 minutes, stirring constantly until the sugar dissolves completely, and the mixture becomes slightly viscous

Pour the chak-chak into the hot honey mixture and mix it thoroughly

Sugar gives the finished products a golden hue, so it’s important to use white sugar, not brown

Note that the butter should cool down so that the eggs don’t curdle when you mix the mixtures

According to the Tatar recipe, arrange the sticks in the shape of a pyramid on a large dish and serve the ready chak-chak with dried fruits, grapes, and tea
