Unsalted butter

Method of preparation

First, you need to melt the butter. Prepare this ingredient first so that by the time you knead the dough, the butter is not hot

Divide four eggs into their components. Whisk the yolks and one whole egg for 1 minute, then add sugar and vanilla and continue at high speed for another 2-3 minutes

Set the egg whites aside in a cool place

The base for the “cloud” should be tender. So, sift the flour in advance to help the dough rise better and avoid any impurities getting into the pastries. Gradually add the flour to the egg mixture and beat for a couple of minutes with the dough hooks. Now, gently pour in the cooled melted butter, beat again with the special beaters until homogeneous

Now, heat the milk. Let it cool. The egg white mixture should have cooled enough; start whipping it into a fluffy foam for 5-7 minutes at maximum speed. Pour the milk into the dough, mix, and add the egg whites. Gently beat with low-speed attachments. The mixture should be uniform but liquid

The dough will be tenderer if you put it in the refrigerator before baking. So, while you wash the dishes and preheat the oven to 180 degrees Celsius, put the mixture in the refrigerator for 20-30 minutes

Choose a mold: if you use a round one, choose a larger diameter. Grease it with butter and pour the cooled dough into it. Bake for 40 minutes. Cut the finished cakes into pastries and let them cool

You can serve them as is. Or, you can additionally whisk the whites of two or three eggs with powdered sugar until thick peaks form and place them on the pastry like a cloud, garnish with a berry on top. Alternatively, make your favorite cream and decorate the pastries that way
