To start, melt the butter: cut 2/3 of the volume into cubes and melt it in a saucepan with a thick bottom over low heat. The butter should not boil, and let it cool down

While the butter is cooling, separate the yolks from the whites and cool the whites in the refrigerator. After about 15-20 minutes, beat the egg whites with a mixer until stiff peaks form. It’s important that the consistency is so stiff that the peaks hold their shape. The better you execute this step of the recipe, the crispier the base for the cookies will be

Now set the mixer to the lowest speed and start adding powdered sugar to the egg whites. Gradually increase the speed while continuing to beat until the powdered sugar is completely dissolved. You need to create a dense meringue-like cream

For kneading the dough, you need to gently mix the cooled butter with the egg whites and continue beating the mixture

Sift the flour in advance and add it to the dough without a blender, stirring the mixture with a spoon. If the mixture turns out too thick, dilute it with warm water and leave it for 20 minutes

Bake on parchment paper, and to prepare an elastic dough for rolling, it’s important to grease the parchment paper beforehand. It’s essential to quickly place dough portions of about 10 centimeters in diameter to prevent the mixture from spreading. Set the temperature taking into account the features of your oven: the optimal temperature should not exceed 170 degrees Celsius
