Soften the butter in advance to room temperature. It’s better to grind the sugar into powder, and sieve the cottage cheese through a fine sieve – the cake will turn out especially tender. However, if you like to feel the graininess in the dough, you can leave it as is

In a bowl, mix the butter and powdered sugar: gradually increasing the speed, beat the ingredients into a fluffy foam. Then, spoon by spoon, add the cottage cheese and continue beating at low speed

Separately, beat the eggs into a foam, you can add a pinch of salt. Combine both mixtures and mix with a spoon

Raisins need to be soaked and dried. To do this, pour boiling water over them twice and let them stand, but not for long, so that they do not soak up too much moisture. After draining, spread the berries on a towel and dry them. If you do this at the beginning of the recipe, you’ll have enough time for them to dry

The dough for the cottage cheese cake should not be thick, so it’s important to consider the peculiarity of working with flour. Sift it beforehand: this way, it will absorb oxygen, and unnecessary debris will not get into the dough. To give a light texture, mix the flour with a baking powder and vanilla, and gradually add it to the base. Cottage cheese gives stickiness, so to level it out or even avoid it, it’s important to sift the flour

For the classic cottage cheese cake recipe, you should use a standard mold: with flounces on the edges for an impressive high baking. If you don’t have such a mold, you can use a standard round or elongated one with a rounded bottom. Be sure to grease it with butter and sprinkle it with flour

Preheat the oven to 170 degrees Celsius, and let it heat up. During this time, prepare the mold and add raisins to the cottage cheese dough for the cake. Evenly distribute the base in the mold: it should fill no more than 2/3 of the volume

Bake the cake for an hour: it depends on the characteristics of the oven, it can take longer – but not more than one and a half hours. Keep an eye on the shade of the baking: it should be amber, and the texture should be dry – it should not stick to a toothpick when checked. The mold also affects the baking time: if you bake portionally, it will take half the time

The finished cake should cool down before cutting. You can sprinkle it with powdered sugar or grated chocolate on top, or decorate it with a scoop of vanilla ice cream
