Method of preparation

Start by taking cold butter and grate it using a coarse grater or cut it into cubes with a knife. Gingerbread cookies are made from shortcrust pastry, so it’s important that the ingredients are cold

In a bowl, combine the sifted flour, starch, and baking powder. Mix well

Beat the eggs with spices using a mixer at low speed. You can add ground cloves or nutmeg for extra flavor. Now gently add the honey and sugar

Combine the flour mixture with the egg mixture and butter. You should get a large crumbly texture. Pour it onto the table and knead it until you have an evenly dense dough. Wrap it in plastic wrap and refrigerate for an hour

Roll out the chilled dough on parchment paper to a thickness of no more than 5 mm. Shape the cookies and remove excess dough

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Place the cookies on a baking sheet and bake for 10-15 minutes, or until they turn golden brown

Prepare the icing. Beat the egg white with powdered sugar until you get a fluffy consistency. It usually thickens around the 4-5 minute mark, so it’s better to use a mixer. For added stability, you can add half a teaspoon of lemon juice

Once the gingerbread cookies have cooled, place them on a plate. If you don’t have a pastry bag, pour the icing into a plastic bag and make a small cut at the corner. Use it to draw your preferred designs on top of the cookies. You can also decorate the gingerbread with colored icing or frosting, just be careful not to overdo it so that the delicate, spicy aroma is preserved. Your gingerbread cookies are ready!
