To start, let’s prepare the filling. Grate Adygei cheese and Suluguni cheese into a small bowl, add cream, and knead the mixture thoroughly with your hands until it reaches a uniform consistency. Then, add one tablespoon of flour to the cheese mixture. Rinse the dill, finely chop it, and season it with salt. Combine the dill and cheese mixture, and mix them thoroughly

Let’s prepare the dough for the flatbread. In a deep bowl, sift the flour, add dry yeast, sugar, and salt, and mix the ingredients. Add warm water to the dry mixture and knead a firm dough. Incorporate the vegetable oil into the dough and knead it well. Shape the dough into a ball, cover it with a towel, and let it rise in a warm place for about 30 minutes

When the dough has doubled in size, divide it into two portions. Take the first portion and roll it out into an oval shape. Repeat the same with the second portion

Cover the prepared flatbreads with the cheese filling, leaving some space for the edges. Fold the edges of the Georgian dish to create a boat shape. For a golden color, beat an egg and brush the edges

Place the flatbreads in a preheated oven at 220 degrees Celsius for 15 minutes

Remove the khachapuri from the oven. Use a spoon to create a hollow in the center and place an egg yolk there. Add spices to the dish and bake it for an additional 5-7 minutes. For extra richness, brush the finished khachapuri with butter
