Ingredients

Fettuccine pasta

500 g

Butter

1 tablespoon

Vegetable oil

1 tablespoon

Tomatoes (preferably cherry)

Chicken fillet

200 g

Pesto (ready-made sauce)

175 g

Method of preparation

Cook the pasta until al dente: carefully read the instructions on the package to avoid overcooking the pasta. The pasta should be “cooked to the tooth” and still have a slight firmness when bitten

Cut the chicken into small cubes and season with salt and spices. Cut the cherry tomatoes in half. You can leave the skin on the cherry tomatoes if you prefer. If you want a milder taste, you can sauté larger pieces and then chop them finely. Adjust the spiciness according to your preference

Sauté the chicken in a convenient manner and wrap it in plastic wrap afterward. This will help the meat retain its juiciness and prevent it from drying out

In a combination of vegetable oil and butter, sauté the cherry tomatoes until they turn into a chunky sauce. Mix in the pesto sauce, add the cooked chicken, and mix well. Simmer for about 1 minute with a couple of tablespoons of broth. The sauce should have a rich chicken flavor and a consistency similar to 10% sour cream. The taste should be spicy and meaty

Place the cooked fettuccine pasta on a plate, then pour the pesto sauce with chicken over the pasta. Garnish with fresh basil and oregano leaves
