Shortbread strips consist of two layers with jam in between. To start, you need to prepare the crust: the pastry has a delicate crumbly base made from shortcrust dough. Therefore, all the ingredients should be cold from the refrigerator

Grate the butter using a coarse or lemon grater. Beat the sugar and egg until you achieve a fluffy foam. You can use a hand blender, but it might take more than 5 minutes. If using a mixer, 3 minutes on maximum speed should suffice

Sift the flour beforehand. Mix it with the baking powder, and set aside a few tablespoons to avoid making the dough too dense. The shortbread crust should be tender

Add the grated butter to the egg foam and start beating. It should turn into a cross between a mousse and a cream. Add the flour mixture and gently mix with a spoon. When the mixture becomes thick, knead it into a soft shortcrust dough

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). While the oven is heating, cut parchment paper and lightly grease it with butter. Roll out the dough directly on the paper to your preferred size, either the length of the entire baking sheet or two rectangles

The temperature is crucial for shortcrust dough, so cool it in the fridge for half an hour. Bake it for no more than 20 minutes, but start checking after 10 minutes to ensure it doesn’t brown too much, as oven strengths may vary

Let the baked crust cool. Trim the edges and crumble them into crumbs. Then, spread jam evenly on top and layer another crust on it. Spread jam on top of the second crust. It should create a cake-like structure: crust, jam, crust, jam. Cut the finished product into small rectangular pastries. Your Shortbread Strip is ready for tea! It’s tender, crumbly, with a tangy taste of jam and a soft base. The simplest and most delicious dessert is ready to delight you and your loved ones!
