Take the butter out of the refrigerator and leave it at room temperature for a few hours to soften

Sift the flour together with the baking powder and salt, as this will make the finished products softer and fluffier

Mash the softened butter with sugar using a fork, add the egg and sour cream, and beat until smooth

Add the flour with baking powder and knead the dough until it’s not too tight; it should be tender and soft

Wrap the dough in plastic wrap and place it in the refrigerator for 1 hour

Moving on to the cottage cheese filling

Sift the cottage cheese through a sieve, add sugar, egg yolk, and vanilla sugar

Gradually stir in the flour; the mixture should become dense and homogeneous

Return to the dough: divide it into 8-9 portions. Roll out each portion into a ball and make a flat cake about 0.5 cm thick

Now, shape the sochni: place the cottage cheese mixture on one half of
the flat cake and cover it with the other half of the dough. The pastry
should resemble a slightly opened envelope

Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit). Place the sochni on a baking sheet lined with parchment paper and brush them with egg yolk

Bake the pastries for 25-30 minutes, until they turn golden brown. Sprinkle the finished pastries with powdered sugar and serve
