Spaghetti: what is the peculiarity of production?

No wonder Italy is considered to be a country of pasta lovers. Pasta has existed in this place for a long time, originally prepared by hand and without much variety of forms. The first industrial production of pasta was established in Naples at the beginning of the 15th century. This location was chosen because of the natural fluctuations in temperature, sometimes up to four times a day, which provided the high and low temperatures needed to dry the pasta. Particularly fastidious in this process is spaghetti

Raw materials for spaghetti production

Some types of pasta, including spaghetti, are made:

This wholemeal flour is made from bran, endosperm and germ of durum wheat, it has a high protein content and little starch. It is grown specifically for the production of pasta

Such flour is also used, but more often in low-priced pasta. Pasta with the addition of wheat flour is more brittle, while cooking it can stick together and boil soft. Therefore, spaghetti flour should be from durum wheat

Features of spaghetti production

Spaghetti production is a complex automated process that includes six steps:

Dough kneading

The main components are mixed together, natural dyes and eggs are added for a rich taste

Rolling

Excess liquid and water bubbles are removed from the dough in the laminator

Pasteurization

The dough is heated up to 220°

Cutting

Spaghetti being cut with rotating blades

Drying

The longest process in the production of spaghetti, it takes 12 hours

Pasta producers offer a wide range of dried and fresh products. Including instant products – spaghetti, which is enough to pour boiling water

Pasta can also be cooked at home, in which case the production stages of rolling, pasteurization and drying are excluded, because homemade spaghetti is not stored, they are boiled immediately after cutting by hand or on an extruder

Pasta, due to its nutritional value, is suitable for those who follow their diet. They are easy to prepare – a plus for people who do not like to stand at the stove for a long time and spend time on complex dishes
