Eggs, sugar, and flour – these are the ingredients that make a wonderful sponge cake
Wheat flour of the highest grade
250 g
Granulated sugar
Eggs

Vanillin
1 teaspoon
Potato starch
Butter
for greasing the mold
Carefully separate the egg whites from the yolks and leave the egg whites in the refrigerator
Add 180 grams of sugar and a teaspoon of vanilla extract to the yolks. Start mixing at low speed with a mixer and gradually increase the speed
Beat the egg whites separately with the remaining sugar
The prepared egg white mixture should hold its shape well. To check, flip the container with the whipped mixture, and it should remain stationary
Sift the flour and potato starch several times
Add the egg white mixture with yolks to the prepared flour mixture
Gently fold the dough from top to bottom – this is important
Place the prepared dough in a mold greased with butter and place it in a preheated oven at 180 degrees Celsius for 40-45 minutes
Do not open the oven during baking, or the pastry will collapse!
After the time has elapsed, remove the sponge cake and flip it over; be sure to let it cool
Optionally, decorate the top with berries or sprinkle with powdered sugar
