Goose feet

Curd cookies, or as they are often called, “goose feet,” are the most famous childhood cookie recipe. Those who didn’t want to decorate the pastries thematically simply made triangular cookies from cottage cheese and shortcrust dough. The difference could be in the composition of the dough: if you add more butter or egg or let the dough rest in the cold before making the shapes, roll it thicker or thinner. Cottage cheese with 9% fat content

200 g

Unsalted butter

Granulated sugar

100 g

Baking powder

7 g

Method of preparation

It’s better to sift the cottage cheese through a sieve for a smoother texture without any lumps. Then add flour and baking powder. It’s a good practice to sift the flour beforehand to make the pastry airy and mix it with the baking powder through a sieve

Grate the butter on a fine grater and mix it with the cottage cheese and flour mixture. Add half of the sugar and form a uniform dough. Leave it in the refrigerator for 20-30 minutes

Preheat the oven to 180 degrees Celsius. Divide the dough into several parts and roll each one to a thickness of 3-4 mm. Cut circles with a diameter of 10-12 cm from the dough. You can use a round template for convenience

Pour the remaining sugar onto a flat plate for coating the cookies. First, dip one side of the circle into the sugar and press to create an imprint, then fold it in half, dip one side into the sugar again, and press it together. Dip the folded cookie into sugar on one side and place the shaped “goose feet” on a baking sheet lined with parchment paper or lightly dusted with flour

Bake in the preheated oven for about 30-40 minutes. Serve the finished cookies after they have cooled down. The dish is ready!
