Liquid honey

110 – 150 g

Medium chicken egg

4 eggs

Butter

1 pack (180 – 200 g)

Sugar

170 – 180 g

Baking soda (can be replaced with baking powder)

Cream for honey cake

Sour cream, 30-35% fat content

700 – 800 g

Granulated sugar

Method of preparation

Make sure to refrigerate the sour cream and take out the butter and eggs

Take a skillet with a thick bottom or a saucepan: pour in the honey and baking soda, and heat for about a minute over low heat. When the mixture foams, add part of the sugar and butter. Remove from heat and stir until the mixture becomes uniform

Then add the eggs one by one, stirring each time with a whisk. Sift the flour and add it until the dough becomes thick

Take a springform pan – it’s easier to remove the cake layers. Line it with parchment paper and spread the dough. Preheat the oven to 170 degrees Celsius (340 degrees Fahrenheit) and bake each sponge cake for about half an hour. Let them cool

While the layers are baking, whip the sour cream with sugar until it becomes a creamy foam. Cut the prunes and nuts

Assemble the “Pancho” cake: cut off the bottom of one of the sponge cakes, about 2 cm thick. This will be the base of the honey cake. Cut the rest of the sponge cake into cubes

Pour the base with syrup, spread the cream, add dried fruits and nuts, and start placing the cake cubes. Dip each cube into the cream to let it soak and become tender. Continue to do so until the cream runs out. If there are leftover cubes, you can crush them and use them to decorate the top of the honey cake

The finished dessert needs to be left to soak for 10 hours in the refrigerator. Honey cake “Pancho” is ready!
