Ingredients

Unsalted butter (at least 72% fat content)

200 g

Thick sour cream (at least 20% fat content)

100 g

Granulated sugar

125 g

Brown cane sugar

125 g

Cocoa powder (preferebly hot chocolate)

100 g

Baking powder

1 pack (10 g)

Water

1 glass (250 ml)

Large chicken egg

For cream

Chocolate (at least 50% cocoa content)

3 bars (600 g)

Unsalted butter at room temperature

300 g

Method of preparation

Start by preheating the oven to 180 degrees Celsius (350 degrees Fahrenheit). Prepare two pans of the same diameter in advance, or you can bake the cake layers alternately

Sift the flour: this will ensure the baked goods turn out especially airy. Mix it with cocoa powder and baking powder. Add the brown cane sugar, combining both types into one mixture

In a small saucepan, melt the butter: it’s important not to boil it, but to heat it until completely melted. Let it cool slightly and then add the sour cream and water. Beat the eggs separately and combine them with the buttery-sour cream mixture. Add the vanilla extract and mix the base with a spoon. Now start whisking the mixture with beaters, gradually adding the mixture of flour and cocoa. It should be a thick, but not stiff, batter

Place the pan with the cake batter into the preheated oven and bake for half an hour. Check for doneness with a toothpick: it should easily go in and come out dry from the cake

The finished cake layer should have a rich brown color. Allow it to cool and then start preparing the cream

The butter should be soft, so leave it at room temperature. Melt the chocolate: you can use a microwave or a double boiler. Beat the ingredients until you achieve a thick cream with a rich chocolate flavor

Alternately spread the layers with the cream and on top. Let it sit for 5-7 hours to allow the flavors to meld

The chocolate cake is ready!
