Start by preheating the oven to 180 degrees Celsius (350 degrees Fahrenheit). Prepare two pans of the same diameter in advance, or you can bake the cake layers alternately

Sift the flour: this will ensure the baked goods turn out especially airy. Mix it with cocoa powder and baking powder. Add the brown cane sugar, combining both types into one mixture

In a small saucepan, melt the butter: it’s important not to boil it, but to heat it until completely melted. Let it cool slightly and then add the sour cream and water. Beat the eggs separately and combine them with the buttery-sour cream mixture. Add the vanilla extract and mix the base with a spoon. Now start whisking the mixture with beaters, gradually adding the mixture of flour and cocoa. It should be a thick, but not stiff, batter

Place the pan with the cake batter into the preheated oven and bake for half an hour. Check for doneness with a toothpick: it should easily go in and come out dry from the cake
