Buckwheat honey (to your taste, if you have preferences)

100 g

Sugar

60 g

Medium chicken egg

60 g

Baking powder

10 g

Cream for honey cake

Sour cream with at least 20% fat content

Method of preparation

Take a small saucepan with a thick bottom or a skillet and pour honey into it, adding a little baking soda. Place it on the heat and stir constantly

When the liquid starts to foam, leave it on the heat for another minute and assess the shade. The color of the mixture should become caramel

Beat the eggs with sugar until foamy

Combine the cooled honey mixture with the beaten eggs and mix gently

The resulting mixture should be liquid but homogeneous

Sift the flour and add it to the mixture along with the baking powder. The dough will be dense but stretchy

Grease the mold with butter beforehand and pour the dough into it. Then place it in a preheated oven and bake for 40-50 minutes

Remove the cake base from the mold and wrap it in plastic wrap. It should cool down to maintain its softness

You can trim the top and crush it for sprinkling, and then cut the cake into as many layers as you like, but you should have at least 4 cake layers

The ingredients for the cream should be cold

Combine the cream and condensed milk and beat everything into a fluffy stable foam

Add sour cream and continue to beat. The cream will become tender but not thick. It should hold its shape well

Now it’s time to assemble the cake

Generously coat the honey cake with the cream; each layer should be cold

The height of the cake will depend on the number of layers

Once assembled, coat the cake with cream on the sides and on top, sprinkle with crushed cake, and refrigerate for 6 hours

Cooking tips

Be sure to preheat the oven in advance to a temperature of 160-180 degrees Celsius (depending on your oven’s specifications)

You can check the readiness with a skewer: it should come out dry from the center of the cake after removal

The honey cake should be coated on the outside with crumbs, so be sure to crush the trimmed layer in advance
